It’s getting more and more difficult to actually prepare dinner…especially when Mr. B is traveling and it’s just me.  Little B wants to see what you are chopping, what’s on the stove and what’s on your plate.  While I appreciate his curiosity, it definitely slows down the process.  Having said that, to simplify dinnertime, I have been rotating some of the same recipes in the past few weeks, modifying them ever so slightly so they don’t become completely mundane. 

  • Arugula salad with grilled chicken, red and yellow peppers, carrots, asparagus and balsamic vinaigrette.  So simple and easy to put together.  Mr. B typically grills the chicken and peppers for me on Sunday night (alongside what we are having that night) and I assemble during the week.  I add in fresh mozzarella if I’m feeling crazy!
  • Gluten-free pizza with peaches, blue cheese, red onion and bacon (with a heap of arugula on top, of course…as you’ve learned by now, there is always arugula in my fridge).  I usually make this with goat cheese instead of blue…and for a reason.  I didn’t love the blue cheese on this particular ‘za, but I love the combination of the peaches, onion and crisp bacon.  Adding goat cheese next time…
  • Teriyaki turkey lettuce wraps with grated carrots, julienned cucumber, slivered almonds, avocado and topped with a dash of peanut sauce.  The messiest thing you will ever eat, but simple to make and delicious!  I add brown rice when I need something a little more substantial.

Sweet and sour turkey lettuce wraps with mango coconut rice, shredded carrot and julienned cucumber. 

Even though last night’s dinner required the use of a stove after a long, scorching hot day, it was well worth it! Mr. B and I are big lettuce wrap fans and will typically order as a healthy appetizer when dining out or ordering in (my father-in-law also makes a mean version…g-free for me, of course). Using lean ground turkey, brown rice and healthy veggies, this main course creation was delicious (if I do say so myself!) and incredibly filling!
