          When it comes to my breakfast and lunch routine I basically eat the same thing for weeks and then one day, I literally can’t stomach the thought of it. At the moment, I am loving tropical green smoothies (non-fat coconut greek yogurt, pineapple, banana, almond milk and spinach) for breakfast and lettuce wraps for lunch.

          My lettuce wraps contain everything from a salmon burger to a good old fashioned (turkey) BLT. I love how they “crunch” without leaving me with the post-lunch wheat belly. I have even convinced my carb loving husband to give them a try. While my grocery store occasionally has packaged lettuce wraps I find that regular old romaine does the trick. 

          Lettuce wraps obviously aren’t as delicious as a soft, white bun they are a much healthier alternative - I encourage you to give them a try!

              Now that my practicum is over and my weekdays are free, I have had time to slow down and enjoy the little things. 

              • Waking up slow, without an alarm
              • Morning walks with Dugan and Mike, with coffee shop pit stops
              • Eating a proper, leisurely breakfast (courtesy of my husband)
              • Afternoon runs, today was a good one. You know those runs where you feel like you can go forever and there are no mental obstacles weighing you down?
              • Quality and productive time put into the job search
              • Continuing to make and finalize summer plans. It’s going to be a good one
              • Picking up some extra shifts at my part-time serving job
              • Checking off the nagging items on my to-do list. I am finally going to get a new driver’s license, with my new married name!

                  -Made a trip to the local farmers market this past Saturday, spent less then 10 dollars and came home with a bag full of fresh veggies, fruit and goat cheese. Feels like summer and helping my bikini body!

                  -After a month of being stressed out and almost checked out with my job today started a new chapter with a new boss and role. It’s restored my drive, let’s hope it stays that way.

                  -Work tomorrow, wednesday and Thursday. Half day Friday and off til Tuesday! Can not wait!!

                  Is 7:30 to early to go to bed on a Monday??

                    I made this pistachio pesto chicken dish for dinner tonight and it was delicious! Plus, it was incredibly easy, the hardest part was probably shelling the pistachios.
